Ingredients

 

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 ripe mango, peeled and diced
  • 1 avocado, peeled and sliced
  • 1/2 red onion, finely chopped
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons olive oil

Instructions:

 

  1. Cook the quinoa: Rinse the quinoa under cold water until the water runs clear. Place the quinoa and water (or broth) in a saucepan, bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Let it cool.
  2. Prepare the ingredients: While the quinoa is cooking, dice the mango, slice the avocado, and chop the red onion.
  3. Mix the salad: In a large bowl, combine the cooked quinoa, mango, avocado, red onion, and cilantro.
  4. Make the dressing: In a small bowl, mix the lime juice, olive oil, salt, and pepper. Pour over the salad and mix well.
  5. Serve: Serve the salad fresh as a main dish or side. You can add some leafy greens if desired.
