Ingredients
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 ripe mango, peeled and diced
- 1 avocado, peeled and sliced
- 1/2 red onion, finely chopped
- Juice of 1 lime
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Cook the quinoa: Rinse the quinoa under cold water until the water runs clear. Place the quinoa and water (or broth) in a saucepan, bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Let it cool.
- Prepare the ingredients: While the quinoa is cooking, dice the mango, slice the avocado, and chop the red onion.
- Mix the salad: In a large bowl, combine the cooked quinoa, mango, avocado, red onion, and cilantro.
- Make the dressing: In a small bowl, mix the lime juice, olive oil, salt, and pepper. Pour over the salad and mix well.
