At Exquisite Fruits, we’ve always been fans of puff pastry squares with apple and pastry cream. But when we discovered the squares with Bright Red Persimmon and cream, we instantly fell in love.

They are so easy to make that within minutes, you’ll have a dessert that will delight anyone who tries it.

Ingredients for 6 servings

1- Two kaki rojo brillante.

2- A rectangular sheet of fresh puff pastry.

3- Syrup to brush the tartlets.

4- Pastry cream.

Ingredients for the pastry cream:

1/2 vanilla bean.

2 egg yolks.

250 ml milk.

25 g cornstarch.

50 g sugar.

The zest of one lemon.

How to make the pastry cream:

1- Heat the milk and vanilla bean (along with the seeds previously scraped out) in a saucepan until boiling. Remove from heat and let it cool to room temperature. Strain the milk to remove the vanilla bean.

2- In a bowl, whisk the egg yolks and sugar until the mixture is smooth. Dissolve the cornstarch: pay special attention to dissolving the cornstarch properly, as lumps will form if it’s not well incorporated. It’s best to dissolve it in a little cold milk first before adding it to the mixture.

3- Slowly add the milk with the cornstarch to the egg mixture, stirring continuously. Ensure that the milk is not too hot to avoid cooking the yolks. Check that the milk is at room temperature before mixing.

4- Once the mixture is ready, cook it over low heat. Stir continuously to prevent sticking and wait until it thickens. In a few minutes, you’ll have a delicious pastry cream for your Bright Red Persimmon tartlets.

How to assemble the squares:

1- Peel the persimmons and slice them very thinly.

2- Prepare the puff pastry sheet and place it on a baking tray lined with parchment paper.

3- Spread the pastry cream evenly over the puff pastry, leaving a small border.

4- Arrange the persimmon slices on top, covering the entire pastry cream.

5- Preheat the oven to 200°C (392°F). Bake the tartlets for about 15-20 minutes.

6- Once out of the oven, cut the puff pastry into square pieces, and your tartlets are ready to enjoy.
