Place the quinoa and water (or broth) in a saucepan, bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Let it cool.  <\/li>\n<li><strong>Prepare the ingredients:<\/strong> While the quinoa is cooking, dice the mango, slice the avocado, and chop the red onion.<\/li>\n<li><strong>Mix the salad:<\/strong> In a large bowl, combine the cooked quinoa, mango, avocado, red onion, and cilantro.<\/li>\n<li><strong>Make the dressing:<\/strong> In a small bowl, mix the lime juice, olive oil, salt, and pepper.
